How to make Chogye Noodles without Cold Noodles Soup

Cooking Steps
STEP 1/12
Cut the chicken's tail and head with scissors and remove the fat under the wings and around the abdomen with scissors.

Cook the trimmed chicken in boiling water for 3 to 4 minutes, turn off the heat, wash it clean under running water, and remove impurities from the inside. Especially, there are a lot of impurities in your stomach, so please scratch it and clean it.

Pour water into a large pot until chicken is soaked and add the rest of the onion, green onion and garlic. Bring to a boil over high heat for 30 to 40 minutes.

While boiling, shred the paprika and shred the cucumber as well, or use a shredder to make a thin shape.

When the meat is cooked, take out the vegetables in the broth separately.

Pour the stock into a bowl using a cloth to remove the oil.

Mix soy sauce, sugar, and red pepper in the hot broth first, and then put it in the refrigerator to make the broth cold.

While cooling the broth, tear the chicken into small pieces, focusing on the breast and the meaty parts.

Season the meat with pepper, sesame seeds, and sesame oil and soy sauce.

Boil the noodles in boiling water for 3 to 4 minutes, put them in a strainer tray, and rinse them with cold water.

Put noodles in a bowl and add vinegar, mustard, and salt to the cooled broth. If you eat it with noodles, the seasoning of the broth may feel weak, so make it slightly stronger while eating it.
STEP 12/12
Pour the broth into a bowl and put the rest of the vegetables and chicken on top, and you're done with cold Chogye noodles!
