How to grill half-dried gourd in perilla oil
I like fish dishes, so I tend to handle fish often. Rather than grilling it right away, if you season and trim it properly, dry it for a day or two, and then grill it, it becomes harder and delicious. You buy semi-dried fish to jump over that hassle. You don't need a special recipe for grilled fish, but my secret is to cook it with cooking oil and perilla oil. The savory taste of perilla oil reduces the fishy smell and maximizes the savory taste.

Cooking Steps
STEP 1/4
Wash the half-dried gourd in rice water and dry it with a kitchen towel.
STEP 2/4
Grease a heated frying pan with oil and cut the gourd in half.
STEP 3/4
Sprinkle a tablespoon of perilla oil on the rack. You don't have to apply it too carefully because the perilla oil spreads evenly when you turn it upside down and bake it later.
STEP 4/4
Reduce heat to medium and bake back and forth for 15-20 minutes.
If you mix oil and perilla oil when you grill fish, it removes the fishy smell and adds a savory taste.
