Jeongseong Hansang Lunch Box, Making Healthy Food Samgye Over Ri
I thought about eating nutritious food according to the keywords of "Strong Meal" and "Healthy Home Meal." I made this recipe while thinking about how to eat chicken health food without soup. Samgyetang is difficult to make into a lunch box because of the soup, so I made a nutritious Samgye over rice that can be wrapped in a lunch box. Since the chicken broth was added when making rice, the rice itself is completely nutritious, and we also prepared vegetables and steamed eggs to consider nutritional balance. The nutritious rice itself is delicious. The chestnut is chewed in between, so it tastes sweet, and the texture is much better because the bean sprouts and chives are crunchy. If you're thinking of a healthy lunch box, I think it's a great composition.

Cooking Steps

[Preparing chicken broth]
Drain the chicken legs, put a little oil on the preheated frying pan, and cook them back and forth until golden.
You don't have to cook it all, but just brown on the outside.

Boil chicken legs, 3 jujubes, a handful of green onions, 8 whole garlic, and 1.2L water in a pot.
When the broth starts to boil, boil it over high heat for 10 minutes and medium heat for 30 minutes.

After 40 minutes, remove the chicken legs and filter out the ingredients to prepare clear chicken broth.
Boiled chicken broth comes out about 400ml.

While making chicken broth, wash the rice 1 1/2 cup (based on paper cups) and soak it 30 minutes first.
When the rice is soaked, strain it through a sieve and discard all the water.

Add 300ml of chicken broth, add 50g of chestnuts, 12g of carrots, 21g of shiitake mushrooms, and 2 jujube, mix well and press cooking.

I prepared chives and bean sprouts with crunchy vegetables to mix with nutritious rice.
Prepare 16g of chives, and parboil 80g of bean sprouts in boiling water for 3 minutes and 30 seconds to remove the water.

Prepare the sauce by mixing 1/2 tablespoon of minced garlic, 3 tablespoon of soy sauce, 1 tablespoon of vinegar, 1 tablespoon of oligosaccharide, 1 tablespoon of red pepper powder, a little mustard, and a little green onion.
