Remove the moisture by using a cotton cloth or crushing it in a strainer.

Chop the green onion into small pieces. You can use the chives.

Chop the carrots and zucchini, too.

Add the drained mashed tofu and vegetables to a large bowl and beat 3 eggs together.

You can bake it one more time until the cheese melts.

It's a little bland, so dip it in soy sauce.
It tastes good with cheese, but if you're on a diet, you can just eat it.
