Making mascarpone cheesecake

  • mascarpone cheese
    150g
  • Butter
    40g
  • Milk
    80g
  • Honey
    7g
  • egg
    50g
  • Vanilla paste
    6g
  • Soft flour
    35g
  • egg
    100g
  • Sugar
    65g
Cooking Steps
STEP 1/9
Place butter, mascarpone and milk in a pot and heat until butter melts
STEP 2/9
Add egg yolk and vanilla paste and mix
STEP 3/9
Add honey and mix it
STEP 4/9
Sift the flour and put it in
STEP 5/9
Strain the dough through a sieve
STEP 6/9
Put the egg whites in another bowl and add sugar little by little to make meringue
STEP 7/9
Mix the meringue in the yolk mixture
STEP 8/9
Place Teflon sheet on a 15cm mousse ring and add batter
STEP 9/9
Bake in medium heat for 100 degrees 40 minutes + 130 degrees 55 minutes
You have to sift the yolk dough to make a soft cheesecake without lumps.
