I used a handful of dried bracken
I can't make a lot of logistics at once.
Usually, dried bracken is soaked in water and used, but my mom doesn't say that a lot of good nutrients will escape into the water.
STEP 2/10
There may be a lot of impurities on dried bracken, so rinse it in clean water.
STEP 3/10
When the water is boiling, add the clean dried bracken and boil over high heat for about 20 minutes.
You have to stir-fry it later, so don't cook it too soft.
Rinse it in cold water and drain it if it seems to have softened slightly.

You don't have to drain the bracken in cold water, but put it on a strainer and cut it into bite-sized pieces.
STEP 6/10
You have to season the bracken before you fry it.
Add 3T of house soy sauce (Korean soy sauce) and 1T of perilla oil and mix them well. Usually, old vegetables and dried vegetables use perilla oil a lot.
If you don't have perilla oil, you can add sesame oil~
My family doesn't use minced garlic for naejeok. My mom said that if you add minced garlic to vegetables, the smell of garlic is strong
It harms the unique scent and taste of vegetables.
STEP 7/10
Now add the seasoned bracken to the pan and stir-fry 1/2 cup water as it boils.
You can add anchovy broth now.
If you stir-fry it as if the water is almost gone, it's almost done
When it's stir-fried, you can add more seasoning, but make sure to use soy sauce.
You have to taste it and think it's salty.
STEP 8/10
When the seasoning is done, add 1 to 2T of perilla seed powder.

If you turn off the heat and put sesame seeds, it won't be tough and soft

It's chewy, not tough, but soft, and savory!!
I like the taste of bracken itself, so stir-fried bracken greens with simple seasoning was very delicious.
