STEP 1/13
I'll prepare the ingredients first.
Trim the eggplant, green onion, and red pepper and chop them.
I cut the eggplant into a circle, but you can cut it in the shape you want.

I'll make stir-fried fish-flavored eggplant sauce.
Add 1T of soy sauce, 2T of sugar, 2T of vinegar, 1T of soybean paste, and 1T of red pepper powder and mix.
Vinegar is 3T in the existing recipe, but I reduced it because I thought the sour taste would be strong.

Bake the chopped eggplant in an ungreased pan.

Remove moisture from the front and back and cook until golden brown.
When I stir-fried it separately, the texture of the eggplant definitely got chewy.

Place green onion in greased pan and oil green onion.
STEP 6/13
1 tablespoon of minced garlic and 80g of minced beef
Add it and stir-fry it together.
I put in the minced beef at home, but you can do it with minced pork!

When the meat is cooked, add red pepper and stir-fry a little more.

I'll put in the sauce for fish-flavored eggplant

Add 90ml of water and mix well.
I think the amount of water was small later, so I added 30ml more!

Bring to a boil as if boiling.

When it starts to boil, add the baked eggplant.

Bring to a boil a little longer and turn off the heat so that the sauce can be cut on the eggplant.
Lastly, sprinkle sesame oil and sesame seeds to finish.

And so, the simple completed stir-fried fish-flavored eggplants!!
