Cooking Steps
STEP 1/13
I like the skin rather than the flesh in jokbal, so I made it with the ankle.
*If you like meat, you can add pork belly meat and boil it
Remove hair, remove the toenail skin, and wash thoroughly. I put 2 ankle pigs' feet in the rice cooker and left them in the refrigerator for about 12 hours the day before. It doesn't smell bad when it's boiled until all the blood comes out
STEP 2/13
Drain the blood by changing the water in between. After all the blood is gone, the meat is not red and the meat is white
STEP 3/13
Wash and soak in new water, put 1T of garlic powder in a rice cooker and steam it for 20 minutes. It removes the smell and the oil. It gets rid of it
*If you use powder, it doesn't create any ingredients, so it's easy to handle
STEP 4/13
After boiling, throw away the water and wash the pigs' feet clean. The skin has become very hard. Later, I'll boil the meat and the skin until it's gently separated from the bone
STEP 5/13
I put a ton of coffee in a coffee filter for Jokbal and filtered it out
It's good to filter out the powder so that it doesn't get on the jokbal
STEP 6/13
Put 3 cups of water in a rice cooker, including coffee and cinnamon, 2T of garlic powder, 2T of onion powder, 1t of ginger powder, 1T of whole pepper, 1T of soybean paste, 6T of soy sauce, 4T of cooking wine, 3T of honey (grain syrup), 2T of sugar, 1 octagonal, salt, stir well
*If you put in an octagon, it smells like Chinese food, but it's stronger than you think if you put in just one. If you don't have it, you can skip it
STEP 7/13
Add jokbal and cook multi-purpose stew for 30 minutes. Then do not open it and let it sit for 30 minutes. The temperature in the rice cooker doesn't go down easily, so it's going to boil for a while
STEP 8/13
Open it an hour later, flip it over, and cook multi-purpose stew for 30 minutes. After that, do not open and let stand for 30 minutes to maintain the temperature
STEP 9/13
After an hour, open it, turn it over, reheat it for about 9 minutes, and leave it in the heat for about an hour. You can cook it using less electricity
*You don't need to add more water
STEP 10/13
If you take it out, the hard shell becomes a soft jelly. It's all collagen. Enjoy your meal.
STEP 11/13
Using the same recipe, I made 250g of pork feet and pork belly
STEP 12/13
The salted shrimp sauce you dip it in sauce. 1t of salted shrimp soup, 2T of water, 0.5t of garlic powder, 1T of sugar, 0.5t of red pepper powder, chopped green onion, pepper powder, sesame seeds
STEP 13/13
Enjoy your meal.
