Cucumber kimchi. It's crispy until the end.
I ran out of kimchi, so I cut it like kkakdugi with cool cucumbers and put kimchi in it.

Cooking Steps
STEP 1/12
Wipe the cucumber clean with thick salt and rinse it 2-3 times.
STEP 2/12
If you have Van Gala seeds
Since there is a lot of water, dig out the seeds with a spoon.

Cut the seeds into 0.5cm thick pieces.
STEP 4/12
Add 1T of salt and 1/2T of starch syrup and marinate for about 30 minutes.

Grind the apples in a grater while they are pickled.
If you don't have apples, you can replace them with sweet and sour yogurt.

Chop the onions, please.

Slice the red pepper diagonally and chop the chives into 2cm long pieces.

Mix 1T of glutinous rice flour and 1/2C of water well, microwave it for 1 minute, take it out, mix it, and turn it for 30 seconds to make sticky rice paste thickly.

Make kimchi seasoning with salted shrimp, ginger, plum extract, anchovy extract, apple juice, ground garlic, red pepper powder, and glutinous rice paste.

Drain the pickled cucumbers without rinsing.

Mix pickled cucumbers, onions, chives, red peppers, and seasonings.

When mixed, complete with sesame seeds and sesame oil.
*The weather was hot, so I cooked it in the kimchi refrigerator right away for 1-2 days. It was okay to eat it right away because I ate it with rice.
If it's hard to pickle kimchi, you can easily make it in a microwave oven. Mix 1T of glutinous rice flour and 100mm of water, take it out in a microwave for 1 minute, mix it, and turn it for 30 seconds to make the paste stick well as if it were boiling. If you put cucumbers with seeds, water will form, so please scoop them out, pick them up, and put kimchi without rinsing them.
