STEP 1/16
4 quail eggs with 30 pieces at the supermarket...I bought 120 of them
STEP 2/16
Put quail eggs in a pot and add 1 tbsp salt and 2 tbsp vinegar. This is to sterilize quail eggs and peel them well when boiling them.
STEP 3/16
Then, pour water to cover the quail eggs and place them on a gas stove.
STEP 4/16
Boil water evenly over high heat. Mix the quail eggs up and down once.
STEP 5/16
Then reduce the heat to medium and simmer for another 10 minutes.
STEP 6/16
Pour the boiled quail eggs into a sieve and cool them sufficiently by immersing them in running cold water. When boiled quail eggs are soaked in cold water, boiled quail eggs contract as they cool down. This creates a space between the quail eggs and the shell.
STEP 7/16
Boil it in an airtight container and put the quail eggs cooled in cold water. You can put quail eggs more than the picture. When shaking the airtight container, there is enough room for quail eggs to bump into each other. If you close the lid of the sealed container and shake it too hard, it may break the white in the shell, not the shell of the quail egg, so shake it up, down, left, and right several times. When you put boiled quail eggs in an airtight container, it's better to add a little water so that they don't get too dry. Take out the quail eggs in cold water and put them in an airtight container.
STEP 8/16
The hard quail egg shell is cracked well and soft when touched.
STEP 9/16
And you can tear off the quail egg shell with your fingertips. It comes off very easily.
STEP 10/16
Sometimes, peeled boiled quail eggs have shell fragments attached to them while peeling them. So I washed it under running water and took it out.
STEP 11/16
Then put the boiled and peeled quail eggs in a pot and add 12 tablespoons of soy sauce, 3 tablespoons of refined rice wine, 2 tablespoons of oligosaccharide, and 2 tablespoons of plum syrup.
STEP 12/16
And pour 3 cups of anchovy broth from kelp.
STEP 13/16
Then, put it on a gas stove and boil it. Bring to a boil over high heat, stirring evenly.
STEP 14/16
Boil it evenly over high heat. And boil it on medium to low heat. Bring to a boil, stirring evenly.
STEP 15/16
When the sauce is reduced by half, add 2 tablespoons of sesame oil and stir evenly.
STEP 16/16
Lastly, add 420 dried kkari peppers that were washed and removed from the top, mix them evenly, and turn off the heat. Add the pepper and boil it slightly so that it doesn't get too soft.
