STEP 1/10
These are the ingredients for the soup.
These days, I put in the sweetest radish and prepare green onions and garlic to catch the smell.
I'll put the radish in a container and boil it and cut it later and eat it again.
I added milk vetch root and jujube to enhance the feeling of healthy food.
If you boil it with a yellow machine, one direction is mild, but the taste is not strong, so it's good.
You can use ingredients like ginseng, mulberry, and lacquer.
STEP 2/10
How to make chicken soup without any smell!
Blanch the chicken before making the broth.
Boil enough water to submerge the chicken, add about 5 spoons of soju, rice wine, and cooking wine, and blanch the chicken.
I parboiled it for 5-7 minutes using shredded chicken for stir-fried soup,
Blanch whole chicken for about 10 minutes.
STEP 3/10
Rinse blanched chicken in running cold water.
Wipe off any impurities on the chicken.
I rinse it while removing the skin or oil.
If it's whole chicken ramen, make sure to remove the yellow oil lump from the bun!
STEP 4/10
Throw away the first blanched chicken and boil the chicken in clean water with stock ingredients.
Add about 5 spoons of cooking wine or alcohol (soju or rice wine).
Add enough water to cover chicken and stock ingredients.
I'll boil it for 30 to 40 minutes.
STEP 5/10
First, remove the foam from the top, so boil it without covering it.
This foam removal is the second way to get rid of the chicken smell and make a clean soup.
It's a foam mixed with impurities of chicken, so if you remove it cleanly, the soup becomes clear.
If you keep removing the foam, it doesn't form at some point.
From then on, close the lid and boil over medium heat.
STEP 6/10
When the chicken broth is ready, add this to make seasoned red-pepper sauce.
It's good to add regular water, but it tastes better if you add chicken broth.
Make it so that the pepper powder is swollen enough to have a thick texture.
I'm going to season the chicken soup stock later, so I don't season the seasoned red-pepper sauce hard.
STEP 7/10
It's a boiled chicken soup stock! The color came out really well
Leave about half of this broth and boil rice cake soup.
You can really eat beef or anchovy broth and other attractive delicacies.
I ate chicken soup for dinner and made rice cake soup the next morning, and it was really good.
STEP 8/10
Take out the chicken and season it.
Add 1 spoonful of soy sauce and a pinch of pepper and mix well.
STEP 9/10
I was in a hurry to cook, so the picture of the radish was shaken. Haha
Take out the thick radish and slice it like when you make beef radish soup.
The radish is sweet and delicious, so don't throw it away and eat it all!
STEP 10/10
Season the chicken soup with 1 spoonful of soy sauce and salt the rest.
I don't recommend more than a spoonful of soy sauce because the color gets darker when you put in a little bit of soy sauce.
If you season the rest with salt, the taste of the soup becomes clean.
