STEP 1/10
Add gravitational flour and glutinous rice flour and mix until yeast, salt and sugar do not touch.
STEP 2/10
Mix well and add starch syrup and warm water.
STEP 3/10
Add black sesame seeds and mix well, make it round, and cover it with plastic.
STEP 4/10
Ferment hot water and dough in the oven for about 30 minutes.
STEP 5/10
While the dough is fermenting, prepare the filling for the hotteok.
Stir-fry nuts lightly over low heat in a skillet.
STEP 6/10
Add the stir-fried nuts and the rest of the hotteok filling and mix well.
STEP 7/10
If you see a net when you lift the dough, it's fermented well.
Please check the degree of fermentation by the state of the dough rather than the time.
STEP 8/10
Put on plastic gloves, apply a little grape seed oil, spread the dough, and add plenty of hotteok filling inside.
STEP 9/10
Close the joints and attach them thoroughly.
STEP 10/10
Pour 4 tablespoons of grape seed oil into a heated pan and place seam side down.
Bake over low heat, and when the bottom is golden, turn it over and press down with a hotteok presser and bake until golden.
You have to close the joints and attach them carefully so that the hotteok filling doesn't flow out.
Place the seam of the dough down and bake.
