Simple eggplant dim sum (fried eggplant shrimp)
It's a dish I made while thinking about how to eat eggplants deliciously.

Cooking Steps
STEP 1/8
Defrost the shrimp and season with salt and pepper.
STEP 2/8
Chop up the shrimp. To suit your personal preference, if you want to feel the chewing taste, chop it big, if you want a soft taste, chop it finely.

Add egg whites and starch to minced shrimp and mix well.
STEP 4/8
Cut the eggplant diagonally into 3-4cm thick pieces. Please cut the middle part like the picture.
STEP 5/8
Add 3 pieces of shrimp dough to the cut eggplant.
STEP 6/8
Now mix the frying powder with water to make a batter.
STEP 7/8
Grease the pan with plenty of oil, coat the eggplants with batter and fry them.
STEP 8/8
Fry enough to cook the shrimp inside, turning back and forth.
The finished fried eggplant goes well with the sweet chili sauce. If you stir-fry it in the sauce once, it's also good for welcoming guests. The leftover shrimp is good for making mianbao xia.
