Cooking Steps
STEP 1/12
Add eggs, lemon sugar and honey and mix (don't stir too much) until sugar is dissolved to a certain extent

Sift together flour, almond powder and baking powder

Add melted butter (about 50C) and lemon juice and mix well
STEP 4/12
Cover with plastic wrap and rest in the refrigerator for an hour

Beat the chilled dough with a spatula

Squeeze 80 to 90% into a pre-buttered madeleine mold

Bake at 180C for 10-12 minutes

Carefully remove from mold and cool
