Drain the anchovies and boil the broth with 2C of water.

Prepare fried shrimp for commercial use and fry them at 180 degrees for 5 minutes.

1)Remove the kelp from the boiled broth, add soy sauce, sugar, cooking wine, and salt, and boil it, then turn off the heat and add katsuobushi and leave it to boil.

Boil the udon noodles in boiling water for about a minute, then put them in a sieve and rinse them in cold water. (The noodles get chewy.)

Cut shiitake mushrooms into crisscross pieces and remove enoki mushrooms.

Put the udon in the broth filtered out of 1 katsuo bush and turn off the heat once it boils.

Transfer it to a bowl and place it on top of fried shrimp, enoki mushrooms, shiitake mushrooms, and green onions.
The scent of shiitake mushrooms spreads until I finish eating it, so it's really good.
Make a lot of soup, pack it for one person, keep it frozen, and take it out when you want to eat it.
Also, you can add fried vegetables or other fried foods, even if it's not shrimp.
