Cooking Steps
STEP 1/9
Hairtail removes silver powder, which is scratched from tail to head with a knife. You need to get rid of this silver powder so that it doesn't smell fishy. The hairtail is long, so I cut it into pieces again.

Prepare tuna fish sauce and season with hairtail. It's better because it's non-smoky tuna liquid. Pour half a cup of tuna sauce into the washed hairtail and marinate for 10 minutes. Turn it over once at 5 minutes and let the seasoning soak evenly. If you pour tuna fish sauce, it tastes better and the meat is firm!

Cut the radish into 10 square pieces and use the Cheongyang chili as a container. Cut the green onion diagonally.

Add 4 tablespoons of red pepper powder, 1/2 tablespoons of red pepper paste, 1 tablespoon of ssamjang, 2 tablespoon of soy sauce, 1 tablespoon of minced garlic, and 2 tablespoon of plum syrup and mix them evenly. You can add a cup of water to it, or you can add the seasoning and pour a cup of water into the pot. I added water to the sauce.

Place cheongyang pepper on the bottom of the pot and place radish and hairtail on top. If you put the radish first, it sticks well. I'll pour in the sauce. If you didn't add water, you can add a cup of water here. I mixed the seasoning and water together. I'll boil it.

Here's the second secret. It's ice. When it starts to boil, add half a cup of ice to the edge. The reason why you put ice on the edge is not to wash off the seasoning. The secret of braised hairtail in Namdaemun is to boil and cool three times so that the seasoning is soaked. The ice works to raise and lower the temperature. The ice takes over the effect of boiling three times. You just need to put ice twice. When the ice melts and boils again, add half a cup of ice again. It opens up the tissue, so the seasoning seeps in, the tissue contracts, and the seasoning seeps in. Cover and bring to a boil.

Reduce the heat and boil it for 10-15 minutes until the soup boils down, then add the slanted green onions and complete. Listen to the delicious sound.
