Cooking Steps
STEP 1/3
Cut ripe kimchi into bite-size pieces. Add about 10 to 15 of them. Since it is not large, anchovy poop or intestines have not been removed, and if you use it as anchovy again, it is good to remove poop or intestines to remove the bitter taste.
STEP 2/3
When I made kimchi stir-fry, I usually used sesame oil, but today I used perilla oil. I added perilla oil and stir-fried it, and the taste at the end felt much softer. 1T perilla oil, 0.5T red pepper paste, 0.5T sugar. Add 100mL of water, 2T of ripe kimchi soup, and just boil it over medium heat.
STEP 3/3
I stir-fried it on medium heat for 25 minutes. Compared to regular kimchi, ripened kimchi feels softer, so if you stir-fry it for about 20 minutes, the soup will be reduced
