STEP 1/15
Wash the sweet potato sprouts with water and toss them with 2 tablespoons of thick salt. Marinate for 5 to 10 minutes.

Break the thin end of the sweet potato sprouts about 1cm.

Pull down the bent sweet potato sprouts.
The sweet potato sprouts don't break in the middle and peel off almost all at once.

The skin comes down to the thick side.

After peeling at once, the skin usually remains in the grooved part of the sweet potato sprouts.

Break the sweet potato sprouts at intervals of 10 to 15cm.
The spacing is up to me.

I compared the salted side and the unsalted side.
As you can see in the picture, the slightly salted side peels off almost all at once. If it is not pickled, you have to peel off one stem several times. So the shape of the peeled skin is also different.

Put 1 tablespoon of thick salt in boiling water and boil the peeled sweet potato sprouts for 3 to 5 minutes.

Rinse in cold water and drain on a strainer tray.

I set up a laundry drying rack on a well-ventilated and sunny window and hung sweet potato sprouts on the tray.

Turn it over once or twice a day.

It's only this much when you boil and dry the sweet potatoes and dried.
Usually, it is kept dry in a well-ventilated and shady place, but if you store it incorrectly, it becomes a prey for insects.
So I safely put it in a zipper bag and put it in the freezer.
