Please prepare 1 cup of soy sauce (200ml), 1/2 cup cooking wine, 3 spoons of sugar, 1 green onion, 1/2 onion, 2 kelp, 1 cup anchovy, and 1 cup of katsuobushi. If possible, remove the intestines and poop from the anchovies. It removes the bitterness.

Please cut the green onion into big pieces.

I'd like to have the onions into big pieces, too. Green onions and onions will be grilled to maximize their sweetness.

Grill the onions and green onions, please. It tastes much sweeter when you make the broth. You can grill it directly on a grill, or heat a dry oil-free pan before baking.

After heating the pot hot, stir-fry anchovies with the intestines and poop removed and blow away the moisture. You can do it in about 20 seconds.

Add 4 cups (800ml) of water, please.

Add the pre-baked green onions and onions, please.

Add 2 pieces of kelp, please.

Once it boils, take out the kelp.
Bring to a boil over medium heat for 15 to 20 minutes.

Turn off the heat and add 1 cup of katsuobushi.

< Tips for making anchovy broth well! >
* Anchovies may taste bitter from the intestines and poop, so remove the intestines and poop and make broth only with the head and body.
* The dried anchovies come out well, so heat up the pot first, then stir-fry anchovies for 15 to 20 seconds to drain the moisture.
* Boil it over high heat once and boil it over medium heat for 15 to 20 minutes to make very delicious anchovy broth.
