STEP 1/11
The first thing to do is to make chili oil. We make a sauce for braised cabbage with chili oil, and when we make it, we use it as a sauce. If we put the remaining chili oil in a container, we can leave it there and use chili oil. Add enough oil to the pan. And cut the green onions into finger-sized pieces and chop them into thick pieces and put them in oil. Add a lot of red pepper powder and boil it over medium heat. If you cook over high heat, the red pepper powder can burn quickly, so start over medium heat.
STEP 2/11
And as it boils up, the oil gradually turns red, creating green onion-flavored chili oil. When it boils, turn off the heat. Leave it for 1 to 2 minutes and strain the contents through a sieve to drain the oil. You can throw away the ingredients.
STEP 3/11
It's the chili oil that was taken out like that. The color is so pretty. It's red pepper oil with a clear red pepper oil. It's chili oil full of scallions. You can make it like this and put it in a container and use it.
STEP 4/11
Since we made chili oil, let's make braised cabbage. First, put the green onions in the chili oil.
STEP 5/11
And chop and put in 2 cheongyang peppers.
STEP 6/11
And chop the red pepper and put it in. Mix it well.
STEP 7/11
Lastly, the seasoning is oyster sauce. Add oyster sauce and mix well. But because it's oil, the contents sink. Mix it again when you sprinkle it on the cabbage.
STEP 8/11
The sauce for braised cabbage is complete. If you make chili oil, you can make the sauce quickly.
STEP 9/11
Divide one cabbage into 1/4 parts and steam it in a steamer. When you press chopsticks~~ Especially when you press the white part on the top, if you go in, it's all cooked. If it is cooked, take it out right away and put it on a plate.
STEP 10/11
I cut it in half to make it easy to eat. The reason why you have to take it out of the steamer right away is that the cabbage is cooked more due to residual heat. If you do that, you'll lose a lot of breath because you gain too much weight. So it's better to take it out of the steamer right away and let it cool.
STEP 11/11
And stir the chili oil sauce that you made and sprinkle it so that the cabbage is written. Cabbage is not seasoned at all, so you'd better sprinkle plenty of sauce. Chef Lee Yeonbok's braised cabbage is complete.
