Remove the skin of lotus root with a potato peeler, cut it, put 1~2T vinegar in boiling water, and boil it for 3~5 minutes to remove browning and the bitter taste will disappear^~^ Put the blanched lotus root in water and store it in the refrigerator^^

In the meantime, soak the pork (300g) in water to remove the blood

Cut 1/2 carrots, 1 bell pepper, and 1 large onion into bite-size pieces

When the pork is half cooked, add vegetables except lotus root and stir-fry it

The lotus root is blanched once, so for crunchy texture, put it in and stir-fry it^^

Add enough water to cover the vegetables

When it boils up, add the curry to the desired concentration I put 4 solid curry^^
(If it's curry powder, dissolve it in water in advance. Do not put all the water in the pot from the beginning. Add it according to the concentration.)^^)

Once you boil the lotus root, it smells like potatoes^^ It has a crunchy texture and goes well with curry. I feel like I'm getting healthier while eating
