Chef Baek's recipe, from all-around soy sauce to how to make kim
Even though the sun is warm, the wind is so cold that I keep thinking of the hot and spicy soup today. So for dinner tonight, I wanted to make kimchi jjageori stew introduced in Mr. Baek's 3 a few days ago, so I bought a pork incident and a piece of onion on my way home from work and made all-around soy sauce to kimchi jjageori stew. "Wow... As expected, it's Jongwon Baek." It was so delicious that I automatically said it! +_+

Cooking Steps
STEP 1/12
First, I'll make the multi-tasting soy sauce.
I will put one green onion, dried shiitake mushrooms, and 4 pieces of kelp.
Cut the green onion in the middle so that it'split the middle.
Soak dried shiitake mushrooms in water and chop them.
That way, the scent and taste come out better.
STEP 2/12
Put 1 cup of soy sauce, 1 cup of soy sauce, and half a cup of mirin in a pot. Add green onions and dried shiitake mushrooms
Boil it gently over low heat.
STEP 3/12
When it's boiled down to a certain extent, add kelp and boil it for another 10 minutes to complete the multi-tasting soy sauce! (Remove the kelp.)
Remove the green onion and refrigerate the remaining universal soy sauce.
(If there's green onion in it, it goes bad quickly.)
STEP 4/12
Shall we make kimchi jjageuri stew now?
Before that, prepare the ingredients!
Shred one pine mushroom, two green onions, and half an onion, and cut the pork into large pieces.

I need to prepare kimchi, too, right?
Pponglim prepared 1/4 head of kimchi. (I roughly shook off the inside of the kimchi.)

You can prepare twice as much water as meat.
If there are two bowls of pork, you can add four bowls of water, right?
When the water starts to boil, add the pork first. That's how the juice doesn't get out.
Then add 1 tablespoon of minced garlic, 2 tablespoon of red pepper powder, and 2 tablespoon of red pepper paste.

Then, add all the vegetables and boil it!

For the multi-tasting soy sauce, prepare 2/5 cups first and add shiitake mushrooms.
Since kimchi is in it, I think it's better to make it bland.

If you cook it enough, the kimchi jjageuri stew is also done!
