STEP 1/33
Prepare the broth. Put dried shrimp and natural seasonings back into the pack and make broth.
STEP 2/33
I'm preparing a radish. I think I just need a radish about 2 centimeters thick.
STEP 3/33
And I'll also prepare green onions. I prepared a lot of green onions. The green onions in spicy fish stew give you a sweet taste and a cool taste. I prepared a root and a half of green onion. And two green peppers.
STEP 4/33
I also prepared mushrooms. I don't care about any mushroom, but I like shiitake mushrooms, oyster mushrooms, and enoki mushrooms. I prepared Matari mushroom.
STEP 5/33
And I prepared 1/2 onions and a little bit of pork pumpkin.
STEP 6/33
Cut the radish and prepare it.
STEP 7/33
Make broth with dried shrimp and natural seasonings.
STEP 8/33
Pour plenty of water. Add onions to this.
STEP 9/33
Cut the green onions into big pieces and put them in.
STEP 10/33
Add green onions and serve the broth. Bring to a boil and after a while, transfer the heat to medium and simmer a little longer.
STEP 11/33
While the broth is being made, slice the pumpkin.
STEP 12/33
Add one or two drops of refined rice wine to the boiling broth. It's to get rid of the fishy taste.
STEP 13/33
And prepare blue crabs. I prepared the crab stew biological crab sold at the mart. So it's been trimmed to some extent. Just wash it in running water once. If you wash the skin with water closed to prevent the flesh from falling off, the flesh will remain safe and the outer skin will be washed clean.
STEP 14/33
Bring to a boil and simmer over medium heat, removing any foam from the top. When the color of the broth turns golden, the broth is complete.
STEP 15/33
Now, I'm going to take out the pack that I put in the natural seasoning.
STEP 16/33
Add 2 tablespoons of soybean paste to the broth and mix well.
STEP 17/33
Add 1 tablespoon of minced garlic.
STEP 18/33
Add 1 tablespoon of red pepper powder. It's to give it a little color and give it a spicy taste. Then, if you add soy sauce as the last seasoning, it becomes savory, light, and deep blue crab soup.
STEP 19/33
Bring to a boil continuously, stirring the broth well.
STEP 20/33
And finally, I'm putting in the crab. Please put it in carefully so that the flesh doesn't get damaged. And stir the ladle after it is ripe enough to stir.
STEP 21/33
Lastly, add mushrooms, peppers, and pumpkins and boil them until the soup is thick. Blue crabs are cooked if they are all red. And if you look at the flesh slightly, you can see that the transparent flesh is completely white.
STEP 22/33
The color is definitely changing from the original broth. There will be broth from various vegetables and mushrooms, and above all, the rich broth from blue crabs will gradually turn the color of the soybean paste.
STEP 23/33
Please season it with soy sauce. You have to season it properly when the soup is fully cooked. Add the soy sauce and boil it. And if you think it's bland when you taste it again, you can add salt, not soy sauce. If you add too much soy sauce, the color of the soup can change. I didn't add salt separately. Soybean paste and soy sauce are enough without salt.
STEP 24/33
The blue crab color is deep orange, and the eggs are ripening. It's almost done now. The soup got thicker, too.
STEP 25/33
Finally, the delicious and cool blue crab soup is cooked.
STEP 26/33
If you put in a lot of cool and sweet radishes while adding crab shells, legs, and enough soup, the blue crab soup is completed, which relieves fatigue on a chilly evening with a wide daily temperature difference in autumn.
STEP 27/33
Remove only the remaining crab meat. This method is also a tip that delicious guys gave while eating blue crab ramen.
STEP 28/33
The broth is sufficiently boiled anyway, so I left only the crab shell as it is and threw away the skin from which the flesh was removed. I only put ramen flakes in here. I didn't put in the powder.
STEP 29/33
And I added a lot of bean sprouts for a cool taste. Now, close the lid and wait for the bean sprouts to cook.
STEP 30/33
The soup boiled up and the bean sprouts were all cooked. Then, add ramen noodles. Since there's a lot of bean sprouts in it, I only added one ramen.
STEP 31/33
Bring the noodles to a boil while lifting them. That's how the noodles become firm and delicious.
STEP 32/33
Put a lot of bean sprouts, radish, and ramen in a bowl and pour the soup.
STEP 33/33
Put the crab meat on top of it. Put the rest of the meat separately in a bowl and put it on top of the noodles and put it on top. It's the same tip that I ate at yummy guys.
