Cooking Steps
STEP 1/6
Soak rice noodles in water for 30 minutes.
STEP 2/6
Mix seasoning ingredients in a small bowl. Wash the bean sprouts in a sieve and drain them, and cut the onions into 1cm thick pieces.
STEP 3/6
Cut the squid's body into 0.5cm-thick rings and the legs into 4cm-long pieces.
STEP 4/6
Heat a deep pan, cover with 1/2 tablespoon of Coconut coconut oil, then add eggs and cook over medium heat for 1 minute to make scrambled eggs.
STEP 5/6
Add squid and onion and stir-fry for 2 minutes over medium heat, rice noodles, 1 tablespoon Coconut oil, bean sprouts, and seasonings for 2 minutes.
STEP 6/6
Remove from heat and mix with chopped peanuts and add lemon and coriander leaves to taste.
