Wash the chicken wings clean, add salt, pepper, and mirin, mix them evenly, and marinate them for more than 10 minutes.

Add 1.5 tablespoons of soy sauce, 3 tablespoons of mirin, 1.5 tablespoons of oligosaccharide, 1 tablespoon of vinegar, 2 tangerines (small), and 1 tablespoon of minced garlic to make soy sauce. I added the tangerine juice.

Leave only one tablespoon of oil in the pan where the chicken is grilled, crush the Vietnamese pepper by hand, and stir-fry it over medium-low heat until the spicy flavor comes up. Then add the ingredients for the soy sauce and boil it. If you feel a little bit of persistence in the soy sauce, add the roasted chicken wings and cook them upside down.
