Making tofu balls with lemon sauce
I made simple Korean food with lemon and tofu. It's a tofu ball with fresh lemon sauce.

Cooking Steps
STEP 1/8
Shall we cut the lemon first? Rinse the lemons in water and soak them in light salt water for more than an hour. Then, wash it with thick salt and rinse it several times. Wipe off the water, peel the lemon thinly if there is a mist, and if there is no, grind the yellow part slightly on the grater to prepare. Prepare lemons by extracting juice.

You have to drain the tofu in advance, but it's good to wrap it in a kitchen towel and put it on a sieve, and then press the tofu with something heavy to drain it. I think it's enough to lose about an hour or two. Prepare cucumbers by turning them into thin slices, sprinkle a little bit of salt and mix them (about 20 minutes)

When some water comes out of the cucumber, wrap it around the cloth and squeeze the water tightly, and chop it to prepare. You can prepare the black sesame by grinding it in a mortar. Mash the drained tofu gently in a bowl, then knead the cucumber, black sesame, salt and pepper.
STEP 4/8
If it gets sticky, take off a bit of tofu dough and make it round. Roll tofu balls in a bowl of mixed wheat and starch (about 2.5cm in diameter) and shake off the powder.

Grease a heated pan with plenty of oil, add tofu balls, and cook until golden brown. I put a little bit of oil in the beginning, but it's not as chewy^^; So, please put a lot around it

Place golden fried tofu balls on kitchen towel.
STEP 7/8
It's good to make the sauce together while the tofu ball is being baked. It's very simple, so you can do it together Slice the stocked shiitake mushrooms thinly, and fry them in a heated pan with a little oil. Add all the ingredients for the lemon sauce and boil it. Adjust the concentration of the sauce by adding starch water little by little and remove from the heat. Salt is used for the lack of seasoning.
STEP 8/8
You can mix the tofu balls in the sauce and put them on a plate, or you can put the tofu balls on a plate and pour the sauce on it. Put a little bit of lemon zest on the tofu bowl and finish it off
The day before using the broth, put dried shiitake and kelp in the water to make the broth. I'm going to use dried shiitake to make the sauce.
