STEP 1/8
I used a baking machine to make dough and first fermentation. Add milk + eggs in lukewarm condition, add strong flour, salt, sugar and yeast, and return to the baking machine dough course (complete until the first fermentation)
Put the dough in a bowl and put it on for about 10 minutes as if you were washing it. (Apply wrap and float it in warm water for the first fermentation. In hot summer, it takes 30-40 minutes... When the dough is doubled, the first fermentation is complete.)
After kneading for 5 minutes, add butter
STEP 2/8
Take out the dough that is ready for the first fermentation and remove the gas Medium fermentation (tissue & bench time) by covering wet cotton cloth to rest the tired dough.. Cover the wet cloth and let it rest for about 20 minutes (the fermentation will continue...)
STEP 3/8
After the medium fermentation, remove the gas again, divide it by 3-40 grams, and roll it round with a rolling pin. Lay the 3 sheets side by side (It's a rose making, but the longer the petals are made, the richer the rose will become), roll it gently as if you're rolling gimbap. The 3 sheets are overlapped.
STEP 4/8
Cut it in half as shown in the picture and put it in a disposable mold. (Boil the water for the second fermentation... Turn the oven slightly to the lowest temperature.) Turn off the oven!!
STEP 5/8
On top of the rolled dough, place the white sediment + chocolate syrup in moderation (You can use the red sediment as it is...I mixed a little bit of chocolate syrup because I don't think it's going to look good with sediment.)
There's sediment in it, so the curls will be a bit stiff ~~ But I'm going to roll it gently. Cut the middle part in half, too
STEP 6/8
I've made two types of roses It's not in the picture, but there are also four petals!!! It's a richer rose.
Put it on the baking pan.
Boil the pan in the oven in a stainless steel bowl.Put it in a glass bowl and put it together. (Did you see the table tennis put a stainless steel cup in the oven?)
The second fermentation takes about 40 minutes For fermentation, don't think about the time and check the condition of the dough ~~
STEP 7/8
After the second fermentation, apply the egg water gently.
Preheat before applying egg wash... Take out the water bowl in the oven (the water bowl used for the second fermentation) and preheat it.
STEP 8/8
The temperature is 200 degrees, and the conversion uses both the heating wire and the top!!! The time is about 15 minutes
Fermented bread is baked in a short time. So the temperature is a little higher than regular muffins and cookies. Since the heat is strong, I have to bake one more pan, but there's only one baking pan... I put foil on it!!
Fermented bread needs to be wrapped before it gets completely cold..
