Peach ice cream
I tried making ice cream with fresh and sweet peaches.

  • whipped cream

  • Sugar

  • Oligosaccharide

Cooking Steps
STEP 1/5
Separate the flesh and seeds from the peaches, grind them in a blender, mix them with milk, and simmer until the edges are frothy.
STEP 2/5
Add sugar and oligosaccharide to egg yolk and whisk until creamy. Add a little bit of peach milk, mix well with a whisk, and cook over low heat until slightly thickened, stirring with a spatula.
STEP 3/5
Strain ice cream liquid through a sieve, cool until lukewarm, and whisk the whipped cream to slightly firm.
STEP 4/5
Mix the whipped cream and the peach ice cream liquid that was made beforehand.
STEP 5/5
Put it in a container, freeze it in the freezer, and use a fork to scratch it every hour.
