Make thick anchovy broth with anchovies and kelp and pour about 4 cups (about 800cc) into an earthen pot and start boiling. First, cut the potatoes into cubes and boil them. The potatoes are hard, so put them in first and cook them. Potatoes serve to make soybean paste stew's soup taste more savory. If you boil it for too long, the potatoes will all crumble and the soybean paste stew will become dry, so be careful not to boil it for too long. When the potatoes are cooked to some extent, add onions, shiitake mushrooms, or zucchini and boil them for a while, then add soybean paste later. It's better to boil the vegetables after they're cooked and put them in quickly than to dissolve them from the beginning.

The soybean paste, which has been aged for a long time and has been fermented properly, has a brown surface, but when you scoop it with a spoon, it has a yellow color inside. Instant soybean paste sold at the mart is the same color on the outside and inside. It means that it ferments rapidly without aging and fermenting for a long time, so there are not enough microorganisms.

Then, add tofu right away and boil it for another 1 to 2 minutes. If you add tofu and boil it for a long time, the tofu gradually swells up, the hole in the middle is formed, and the soft taste is less. The tofu is cooked anyway, so you can boil it a little bit. Add 0.5 tablespoons of red pepper powder and Cheongyang red pepper in small pieces. It's not spicy but... It makes the soup taste cool and spicy.
Cheongyang peppers that come out in summer are very hot, so you should put only half of them in.
I don't put garlic in soybean paste stew. The unique taste of garlic offsets the savory taste of soybean paste stew.

Add the green onion at the end and turn off the heat right away. Since it is boiled in an earthen pot, the temperature does not go down easily, so it continues to boil even after turning off the heat. If you cook green onions for too long, the unique scent of green onions disappears and the taste decreases. If it's slightly cooked, it smells the bestDepending on how salty the soybean paste is.. Add a little bit of soybean paste. Soybean paste stew tastes better because it has to be boiled in an earthen pot like this to produce far-infrared rays, rather than a stainless steel pot. Make sure to boil it in an earthen pot.
